Sfusato Lemon
Among the terraces overlooking the sea and the scents of the Mediterranean scrub, the Amalfi Sfusato Lemon is much more than a simple citrus fruit: it is an emblem of the culture, history and gastronomy of the Amalfi Coast.
🍋 Unique characteristics
This lemon, recognized with the Protected Geographical Indication (PGI) as Amalfi Coast Lemon, is distinguished by:
Elliptical and tapered shape, from which the name “sfusato” derives.
Medium-thick peel, bright yellow in color, rich in essential oils that give an intense aroma.
Juicy and moderately acidic pulp, with few seeds, ideal for culinary use.
Grown in the famous “lemon gardens” of the Coast, this fruit benefits from a unique microclimate, protected by the Lattari Mountains and caressed by the sea breeze.

🧑🍳 A versatile ingredient
The Sfusato Amalfitano Lemon is the protagonist of numerous local preparations: from the famous limoncello to traditional desserts, passing through savory dishes that enhance its aroma. Among these, the scialatielli al limone, a fresh pasta typical of the area, stand out.
🍝 Recipe: Scialatielli al Limone
A simple and fragrant first course, which contains the authentic flavors of the Amalfi Coast.
Ingredients for 3 people
For the pasta:
200 g of re-milled durum wheat semolina
120 g of water (as much as needed)
1 pinch of salt
Grated zest of 1 Sfusato Amalfitano lemon
Chopped parsley to taste
For the sauce:
100 g extra virgin olive oil
Pulp of 1 Sfusato Amalfitano lemon
1 clove of garlic, chopped
Chopped parsley to taste
Salt to taste
Preparation
In a bowl, mix the semolina with a pinch of salt, the grated lemon zest and the chopped parsley. Add the water little by little until you obtain a smooth dough.
Work the dough on a floured surface for about 10 minutes, until it is smooth and elastic. Cover with a cloth and let it rest for 30 minutes.
Roll out the dough with a rolling pin until it reaches a thickness of about 5 mm. Cut into strips about 1 cm wide to obtain the scialatielli.
Cook the scialatielli
Bring plenty of salted water to the boil and cook the scialatielli for about 3-4 minutes, until they float to the surface. They are ready when they are soft but still slightly al dente.
Sauté the pasta
Drain the scialatielli directly into the pan with the lemon and garlic sauce. Add a few tablespoons of cooking water to bind everything well.
Mix and serve
Saute the pasta for 1 minute over a high flame, sprinkle with chopped fresh parsley and, if desired, a grating of lemon zest just before serving. For a richer touch, you can add a handful of delicate pecorino or grated salted ricotta, but it is optional.
🍷 Pairings and tasting tips
To best accompany the lemon scialatielli, we recommend a fresh and aromatic white wine, possibly local. A Falanghina dei Campi Flegrei, a Costa d’Amalfi Bianco DOC or even a Greco di Tufo can enhance the freshness of the lemon without overpowering its aroma.
Alternatively, for those who love non-alcoholic drinks, a homemade lemonade with mint leaves and ice cubes becomes a perfect Mediterranean accompaniment.
🌍 A product to experience (and take home)
The Amalfi Sfusato Lemon is not just an ingredient, but also an experience. Its terraced cultivations, the intense colors of the fruits hanging in the sun and the scent that envelops the alleys of Amalfi and Minori, make it one of the most loved products by travellers.
Many farms in the area offer guided tours of the lemon groves, tastings, and workshops to prepare limoncello or traditional sweets. It is a unique opportunity to discover the territory through taste and local craftsmanship.
And for those who want to take home a bit of the Coast, the advice is to buy fresh IGP lemons, preserves, jams or a bottle of artisanal limoncello: fragrant gifts that tell a centuries-old love story between man and nature.
✨In Conclusion
The Amalfi Sfusato Lemon is not just a fruit, but a symbol of the Coast: genuine, sunny, elegant. With dishes like lemon scialatiello, this yellow treasure is transformed into a gastronomic experience that encompasses the flavor of the sea, the sun and the Campania tradition.
Whether you are on vacation on the “Divina” or simply want to bring a taste of it into your kitchen, let yourself be won over by the scent of lemon: just one dish will be enough to feel the Coast a little closer.
